Leek and Potato Soup in the Slow Cooker


I looked at how to make Leek and Potato soup in the pressure cooker but when I located the recipe it was going to take as long in the pressure cooker as it would on the hob so no saving there ! I had a look at how to do it in the slow cooker and that was much better. So here is the recipe !

  • 8 potatoes, chopped
  • 3 leeks, white and light green parts only, cut into 5mm rounds
  • 1 onion, diced
  • 3 tablespoons margarine
  • 2 cubes chicken stock
  • salt to taste
  • 1/2 teaspoon ground black pepper
  • 350ml stock (I used turkey stock frozen from Christmas)
Place it all in the slow cooker and cook on HIGH for 4 hours. Then blend with a stick blender and enjoy !

This is delicious with homemade rolls and ideal for the weather we are having just now !

  2. Thanks ! It used up the last of the leeks from the garden and we had the leftovers for lunch today !
