Pancakes !


We love pancakes in this house ! MasterShoestring  has them for breakfast and after school snacks and I eat them for supper on busy days when I have to be out of the house before the others eat. Tomorrow is Shrove Tuesday, the day before Lent, when traditionally all the eggs and butter in the house were used up in pancakes before the fasting for Lent began. Now we don't fast in this house, all our special diets make that not such a helpful idea, but we do try and cut down on the grocery budget even more during Lent and then give the difference to charity. Pancakes are very cheap to make and delicious to eat so they may well make an appearance during Lent as well !

This recipe will give you thin, crepe like pancakes but if you want thick American style ones just cut everything in half apart from the egg !

1 cup self-raising flour
1 cup water
1 egg

Mix all the ingredients together and oil a frying pan really well. Wait for the oil to be hot then ladle a bit of the mixture into the centre of the pan. Turn with a spatula once the surface of the pancake is no longer runny. You can try flipping them, but I don't recommend trying this if you want to have a pancake to eat !!
