These brownies went down well with all the family over the past few days. MasterShoestring said that he thought they could be a bit sweeter, as he sprinkled icing sugar all over his, but I replied that a cupful of sugar was plenty ! The cocoa powder makes the chocolate flavour very strong, so you could always reduce that a bit if you are not a fan of such a strong flavour.
2 cups self-raising flour
1 cup cocoa powder
1/2 cup vegetable oil
1 cup sugar
1 cup dairy free milk
1 tablespoon vanilla essence
(This makes a very stiff mixture, so you could always add a bit more dairy free milk to loosen it up a bit. The sugar can also be substituted for a cup of alternative sweetener such as maple syrup or Sweet Freedom, then you won't need extra milk.)
Mix all the ingredients together and turn into a greased square 9inch pan. Bake at 350F for 30 minutes. let them cook before cutting into small squares as these are very rich ! Enjoy !
