What to do with Some of those Apples !


If you fancy a change from apple pie and crumble then this apple cake is delicious and very good with cream or ice cream for a special dessert.

8oz self -raising flour
4oz sugar
1tsp mixed spice
1tsp cinnamon
12oz apples
4oz margarine
1 large egg
splash of milk

Mix the spice into the flour and sugar and then rub in the margarine until the mixture looks like breadcrumbs. Chop the apple in to small pieces and mix that in too. Add the egg and a splash of milk and mix together, if the dough is too stiff add a spot more milk. Turn into a greased, lined 9in tin and bake for 30 minutes at 190C. Leave to cool in the tin before turning out and enjoying !
