Making Blackcurrant Cordial


The blackcurrants are ripe and we already have plenty of jam and lots in the freezer from last year. I didn't want to waste them and needed to use them for something fast, as the hot weather means that they are spoiling very quickly.

So out came the steam juicer and a couple of pints of blackcurrant cordial were made very easily.

First extract the juice from all the blackcurrants by simply steaming them in your juicer. Once all the juice has been extracted then measure off 1 pint of blackcurrant juice and dissolve 1 pound of sugar into it over a low heat. As soon as the sugar is dissolved your cordial is ready to be bottled. Pour into sterilised bottles right to the top and screw on the top. As the cordial cools a vacuum seal will be created. Then enjoy now or save for the winter !
