Lentil Bolognaise





Last Friday evening Master Shoestring hosted a sleepover for some friends, one of whom needs to eat a very restrictive diet to stop him being ill ! Driving home I made a few suggestions but the friend didn’t fancy any of those but he mentioned that he had liked the lentil bolognaise the last time he came over, so lentil bolognaise it was ! Here’s the recipe, enough for hungry teens !

300g wholemeal spaghetti ( put this on to boil as you make the sauce and it will all be ready at the same time !)

1 onion, 1 clove of garlic, pinch of mixed herbs, 1 can of tomatoes, 2 sticks of celery, 8oz red lentils, 15oz water

Fry the onion, garlic and herbs together until nicely caramalised. Add all the other ingredients including rinsing out the tomato can to get the very last bit. Bring to the boil and then simmer low for 15 minutes. The red lentils will disappear into the sauce and it will be virtually indistinguishable from the meat sort.
