Cold Meals


This week's hot weather has meant that I have had to completely re-jig the menu plan. I was not keen on having to buy anything to add to meals so the original plan was looked out and then changed to make a series of cold meals.

Monday - Enchiladas became hand held burittos which can be eaten cold.

Tuesday - Gabriel potatoes became frittata, also eaten in slices cold. 

Wednesday - Sausages and chips became barbecued sausages and salad

Thursday - Soup and bread became pizza and salad

Friday - Quiche, boiled potatoes and vegetable becomes cold quiche, potato salad and lettuce

However, we are nearly out of ice cream, as that is all anyone has really wanted to snack on !

Anyone else have 'go to' meals for when the weather gets hot ?

  1. We've been doing similar, it's so good to get some extra ideas. We've also been eating; hummus with chopped veggies, pita filled with falafels and salad, burger in a bun with salad (or crisps), cheese and crackers with grapes, rice salad, pasta salad, french stick with brie and grapes. It's a bit bread heavy so I shall be reading the comments for even more ideas ;-)

  3. We've had 3 BBQ the last week, as it is much cooler cooking outside and it doesn't heat the house up. Also we are cooking enough for the following day. One of our favourite things are chicken parcels, chicken breast cut up in foil, with peppers, mushrooms, onions and pinapple, with a sprinkling of garlic and chilli, the foil keeps the chicken breast moist.
