MasterShoestring has been doing a lot of mountain biking over the holiday and that means that plenty of cake is required ! I have been looking to use up the rest of the Sweet Freedom sugar replacement as well so this was the result !
60g melted chocolate
1/3 cup sunflower oil
1/3 cup dairy free milk
3/4 Sweet Freedom or other sweetener
2 cups self-raising flour
1/4 tsp vanilla essence
2 tbsps cocoa
Mix all the ingredients together and place in a greased 9inch baking pan. Bake at 180C for 30 minutes. Leave to cool then melt the rest of the chocolate from a 100g bar and pour over the top, grate a few flakes of chocolate for the top and garnish to make pretty !
MasterShoestring does not care for the garnish part of this recipe but was most appreciative of all the extra chocolate !!
