Orange Jelly


We are not fond of the bits in marmalade so make this easy orange jam alternative which would also make a great, quick gift.

1 litre freshly squeezed orange juice (you can buy this if you can't find a good deal on oranges)
1 lemon - juice and zest
500g light brown sugar
8 sheets leaf gelatine or vegan equivalent

Place the gelatine in cold water. Put the orange juice and stage in a large pan, stir until sugar is dissolved on a low heat and then bring to the boil for 1-2 minutes. Add the lemon juice and zest. Add the gelatine to the pan and whisk off the heat until dissolved. Quickly pour the orange mixture into clean sterilised jars which you have been keeping warm on a low heat in the oven. Fill to the top, put the lids on tight and then turn upside down.

Refigerate the jam when you have opened a jar, but ours usually disappears on the same day !
