Stir Up Weekend


Tomorrow is traditionally the time to make your Christmas pudding but why not have a go at a cake as well if you haven't already made one ?

This recipe has been used as our Christmas cake recipe for quite a few years as it does not contain eggs.

12oz self-raising flour
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp mixed spice
1 1/2 oz margarine
8oz soft brown sugar
8oz sultanas
6oz currants
5oz raisins
1oz chopped candied peel
2oz glace cherries

Grease tin and line with greaseproof paper. Mix together flour and spices. Rub in margarine and mix in sugar. Stir in all the fruit. Pour in half a pint of water and stir.

Turn mixture into tin and bake for 1 hour at 180c, then turn down oven to 160C for 30-40 mins until cake is cooked. Turn out and leave to cool on a wire rack. If you want to keep the cake then freeze as the small amount of fat and no eggs means that it does not mature in a tin !
