Tasty Saturday Lunch



One of our favourite lunches on Saturday is soup and bread. We really like rolls to go with lunch and these are easy to mix up in the bread maker as dough and then shaped and baked in the oven for 15 minutes.

550g flour (I use a mixture of white and wholemeal)
1tsp yeast
25g oil
300ml rice milk
2 tsps sugar
50ml warm water

Add the sugar to the warm water and stir in 1 tsp yeast. Put to one side to froth and tip all the other ingredients into the bread maker. You can just use a bowl if you haven't got a bread maker. Add the yeast once it is active. Put the bread maker on the DOUGH setting and wait. Knead for 10 minutes if using the bowl method and leave to rise for 1 hour.

Once the dough is ready turn onto a floured board and cut into 12 equal pieces. Roll into round shapes and place on an oiled baking sheet to rise. Cover with a cloth to prevent drying out. ( I put mine in the airing cupboard as it is nice and warm there in the Winter !) Leave to rise for 30 minutes and then bake in the oven at 200C for 15 minutes.


Add your soup of choice ! This is lentil and tomato which I froze earlier. Soup and rolls makes a good tasty Winter lunch and are easy to prepare whilst you are doing other things around the house and garden.

  1. Soup and bread, comfort food at its best! I make bread/rolls in the bread machine too, on the dough cycles... saves my time, and does a great job. Enjoy your lunch, it looks delicious :)

  3. I love soup. I've just made a delicious (and simple) pumpkin one.

    I freeze mine in chinese takaway containers I bought at a Chinese supermarket. When they are frozen I take them out and put them in a bag. I used to stack them on top of one another but since reading a blog about Marie Kondo, I actually store them upright (like she does her jumpers) and labelled on the side showing what the contents are.

    It means I don't have to scrabble around stacks, taking things out the freezer while looking for the meal I intend to eat :) I just open the drawer, peruse the labels and pull the one I want out.

    Now I just have to keep on top of the freezer stocklist, I'm so disorganised with that, it seems out of date every month!

    1. Oh, in case I wasn't clear. When the soup (or whatever) has frozen solid in the plastic container, I take out the block of food from the container and put it into a labelled plastic bag. I figure there's no point freezing air ;-) It also means I can wash out the plastic bag for a few more uses.

      When I defrost the meal, I just take the block out of the bag and put it back into a takeaway container and let it defrost in the fridge overnight.
